TLAYUDA
Tlayuda is a traditional Oaxacan dish. This is considered a classic street food in the Oaxaca city. This is like a type of mexican pizza. the tlayudas are part of the oxaqueños dishes that were declared in 2010, Intangible Cultural Heritage by UNESCO. In San Antonio de la Cal its origin is celebrated and today the Tlayuda Fair is celebrated in July.
This dish is consumed in the celebration of the Guelaguetza and it is the most important festival in Oaxaca. It means "offering" and originally emerged as an indigenous festivity, dedicated to Centéotl, the goddess of tender corn.and this is celebrated every year on the two Mondays after July 16.
Currently it is a feadure party out in its folklore, gastronomy, dance, typical clothes and shows.
The recipe of the tlayuda is
Ingredients
- Tortilla tlayuda.
- Asiento de manteca.
- Ground beans.
- Shredded quesillo.
- Repollo o cabbage (finely washed and desinfected).
- Tomatoes slices.
- Avocado.
- Sauce of your preference.
Preparation mode
- Add enough seared beans to the tortilla.
- Add the cabbage, tomato and avocado slices, as well as the shredded quesillo.
- Fold the tortilla in half and put to brown in coals of coal or on the stove until it acquires the consistency of a toast.
- Put on a plate and accompany with the piece of cecina, you can add the sauce of your preference at time of eating.
The tlayuda is accompanied by a chile called chile de agua, and also roasted chambray onions, and optionally lemon. It can also be accompanied by a mezcal.
