Step 1: Malting
The barley is weighed on arrival at the breweries and subjected to quality controls. It is dried, sifted, screened and put into huge containers, known as steeping vessels, where it steeps in water for approx. 24 hours. The steeped barley is then transferred to germination boxes where it spends 5 to 7 days. The barley is now called green malt.
After the germination period the green malt its piped to the kilns (drying plant) where it is dried by hot air.
Step 2: Brewing
The mash is gradually heated to 78°C in mash coppers. During this process, the enzymes formed during malting convert the malt into malt sugar. The separated spent grains are used for cattle fodder.
At the end of the brewing process the boiling hot water is transferred to a so called whirlpool, where the hops are removed.
Step 3: Fermentation & Maturing
Carlsberg's own pure cultivation unit is added to the wort on its way to the insulated unitanks, where fermentation and the subsequent maturation process take place in the same tank.
After fermentation, the beer its stayed in matures in the tanks developing the desired taste, aroma, and shelf-life. The length of the average maturation period depends on the specific beer type you want to produce
Step 4: Filtration
After the maturing stage, the beer is piped to filtration rooms where it first passes through beer centrifuges which separate most of
the turbidities and yeast. The beer is then subjected to a very
thorough filtration, making it sparkling, clear and ready for
bottling.
Step 5: Bottling
Bottling takes place in large halls using state-of-the-art equipment.
The bottles continue along a conveyor belt to the filler where they are filled with beer. Filling takes place under counter pressure to prevent foaming. The bottles then pass through the crown cork machine which seals them. Carlsberg beers are pasteurized. The bottles are now labeled and subjected to a final check before they are ready for automatic packing. Finally, the crates are conveyed to the palletizing station and on to the warehouse and distribution centers before reaching the consumer.
