French Macarroni

Ingredients:

-3 egg aged whites (separate the clear of the egg for 24 hours before use, leave them in refrigeration and take them out a few minutes before meeting).

-110gr of sliced almonds

-200gr sugar glass

-1/2 cup granulated sugar

-2 tablespoons of water

-2 or 3 drops of food coloring

-1/2 cup of red raspberry jam without seeds

Procedure

Preheat the oven to 200° and placed the louvers at the top of the oven.Have lists two baking trays with waxed paper.

Grind the almonds until they are as flour.

In a large bowl, mix the sugar glass, and the almond flour with 1 of the egg whites until everything is evenly moistened.

In a small saucepan, combine the granulated sugar with the water and take them to the boil. With a brush of kitchen, removes any sugar from the shores. Cooking over high heat until the syrup reaches 240 on a candy thermometer.

In another large bowl, beat the 2 egg whites remaining at medium to high-speed until soft peaks form. With the blender at high speed, carefully put the hot sugar syrup to the egg clear and blend until it is firm and bright. Bat with the stain for food until the meringue is bright pink.

Stir a quarter of the merengue in the mix of almond flour. Using a rubber spatula, move the remaining meringue.

Transfer the meringue to a pastry sleeve. Put on the baking sheets in half-inch balls, about 1 inch away. Let dry for 15 minutes.

Moves the meringues in the oven and turn off the fire. Bake meringues for 5 minutes. Turn on the oven back to 200 and bake meringues again for 8 minutes, until they inflate and the top is firm and bright. Transfers the tray of the oven with racks and let cool completely.

Removes the meringue out of the waxed paper.

Put the jam in a small pastry sleeve with a tip of 1/4 inch. OR you can do it with a plastic bag, by cutting the corner.

Serves the jam on the flat sides of the merengues. Cover with another merengue, and serve it. You can decorate with fresh raspberries.
